The sweet meat from the crustacean found along Florida's coast can be harvested from Oct. 15 through May 15 and as the first traps are pulled up, expect high prices (because of demand) and fretting about limited supplies (the annual catch has been down in recent years, perhaps from red tide or global warming).     Three high-profile chefs are opening restaurants in coming months in Palm Beach County, and food lovers should be excited given the chefs' track records. Jeremy Bearman (Oceano Kitchen in Lantana) will open High Dive, a seafood-focused restaurant, in West Palm Beach's Rosemary Square in December. John Thomas, the final chef at the acclaimed, now-closed 32 East in Delray Beach, will open Sassafras, featuring Southern cuisine, in West Palm Beach later this year. And Pushkar Marathe, who ran the kitchen at Ghee Midtown in Miami, will open Stage, an international small-plates restaurant, in Palm Beach Gardens in late fall.
